Healthy Salmon Avocado Lettuce Wraps

Ingredients

  • 1 pound salmon
  • 2 medium avocados
  • 1 cup zima tomatoes
  • 2 garlic cloves
  • 1 medium lemon
  • 1 cup scallions, chopped
  • 1 head romaine lettuce
  • Olive oil
  • Balsamic vinegar
  • Sweet curry
  • Sea salt
  • Black pepper

Directions

  • Season salmon with olive oil, sea salt, black pepper, lemon, garlic and basil
  • Bake at 375 degrees (convection oven) or 425 degrees (regular oven) for 15–18 minutes
  • Remove from oven and set aside

Directions for Avocado Topping

  • Slice 2 medium avocados and 1 cup of zima tomatoes
  • Drizzle with olive oil and balsamic vinegar
  • Mix in 2 cloves of finely chopped garlic
  • Add a pinch of sweet curry, sea salt and black pepper
  • Allow mixture to sit in refrigerator for a few hours

Directions for Plating

  • Place romaine lettuce leaf curl side up
  • Top with a piece of salmon
  • Top with avocado salad and drizzle with lemon juice
  • Wrap gently
