Ingredients

  • 1 pound boneless skinless chicken breast
  • 1 lemon
  • 1 red pepper, chopped
  • 1 cubanelle pepper, chopped
  • 1 cup grape tomatoes
  • 1 small shallot, chopped
  • 2 cloves garlic, chopped
  • 1/3 cup green onions, chopped
  • Sea salt
  • Black pepper
  • Olive oil
  • Goya Sazonador Total

Directions

  • Season chicken with juice of 1/2 of 1 lemon, black pepper, sea salt and Goya Sazonador Total
  • Refrigerate for 20 minutes or preferably overnight
  • Bake chicken for 30–40 minutes at 450 degrees
  • Add chopped peppers and tomatoes to an aluminum pan drizzle with olive oil, sea salt, and pepper
  • Bake for 20–25 minutes at 450 degrees
  • Remove chicken from oven allow to cool, reserve chicken broth from cooked chicken
  • Once chicken has cooled, gently shred chicken using your fingers
  • Remove roasted veggies from oven
  • In a sauce pan over medium heat add 1/2 tablespoon of olive oil, chopped shallot and garlic, cook until shallots are softened
  • Add shredded chicken, roasted vegetables and reserved chicken broth to sauce pan; toss together
  • Garnish with chopped green onions
  • Serve over white rice or platanos maduros
