Ingredients

  • 1 pound shrimp, cleaned and deveined
  • 1 cup pepperdews
  • 1 cup tomatillos
  • 1 cup shiitake mushrooms
  • 1 cup cherry tomatoes
  • 1 small jalapeno pepper
  • 4 basil leaves
  • 1 lemon
  • 4 cloves garlic
  • 8oz plain goat cheese (may sub ricotta cheese)
  • 3/4 cup parmesan cheese
  • 1 1/2 tablespoons butter
  • Olive oil
  • Sea salt
  • Black pepper

Directions

  • Season shrimp with 1 1/2 tablespoons of olive oil, 2 teaspoons of black pepper, 2 teaspoons of sea salt and juice from lemon
  • Cover and refrigerate for 20 minutes
  • Place all vegetables into a baking sheet, drizzle with olive oil, sea salt and black pepper
  • Bake for 20 minutes at 400 degrees
  • Place a saucepan on low heat, add butter and olive oil, bring to a simmer
  • Chop four garlic cloves add to sauce pan
  • Remove roasted vegetables from oven
  • Add roasted vegetables and cheese to blender, blend for 30 seconds
  • Add roasted vegetables and cheese mixture to sauce pan, stir together
  • Add 1 pinch of salt
  • Add 3/4 cup of shaved parmesan cheese, stir until cheese melts into sauce
  • Add raw shrimp to sauce, cook until shrimp turns pink
  • Serve over rice or pasta
