  • 1 package of pre-made pastry puff
  • 8oz. cream cheese
  • 2 cups variety of berries (blackberries, blueberries, raspberry, strawberry)
  • 1 vanilla bean (split in half, remove paste)
  • Vanilla extract
  • Vanilla sugar
  • 1/2 cup butter, melted
  • Raw sugar


  • Defrost pastry puff according to packaging
  • Lay pastry puff flat on parchment paper
  • Using a cooke cutter carefully cut out shapes, remove shapes and place on baking sheet with parchment paper
  • Gently brush a thin layer of melted butter to cover the top of the cut out pastry puff
  • Using the base of a spoon gently make an imprint in the center of the shape
  • Bake pastry puff for 5–8 minutes at 375 degrees
  • Cream cheese filling: In a microwave safe bowl, warm up cream cheese for 10–15 seconds
  • Add 1 tablespoon of vanilla extract and 1 tablespoon of vanilla sugar, stir
  • Add 2 1/2 tablespoon of raw sugar and 1 teaspoon of lemon juice, stir
  • Split vanilla bean in half, scrape beans and add to cream cheese mixture, stir
  • Refrigerate cream cheese filling for 30 minutes
  • Remove pastry puffs from oven
  • Brush another thin layer of melted butter on top of the puffs and lightly sprinkle vanilla sugar to cover tops
  • Split puffs in half, add a spoonful of vanilla cream cheese filling, 1/3 cup of variety of berries and top with other half of puff
