  • 1 bag of gandules “pigeon peas”
  • 1 smoked ham chop
  • 2 cups of chicken stock
  • 1 shallot, finely chopped
  • 1 red pepper, chopped
  • 1 medium tomato, chopped
  • 4 cloves of garlic, finely chopped
  • ½ cup of white wine
  • Olive oil
  • 2 tablespoons of Goya sofrito


  • Boil gandules in water with a teaspoon of olive oil
  • Pan fry one smoked ham chop until golden brown on both sides, add to beans
  • Add shallot and red pepper to pan sauté in oil with ham chop
  • Once shallot is soft and translucent add garlic and sauté
  • Add mixture to beans
  • Add chopped tomato to beans
  • Add ½ cup of white wine, stir and allow to cook for 2 to 3 hours on low
